How to prepare biryani cost sheet?

 


Rs. 450 for 5 people, with 200 gm chicken and 500 gm of cooked rice per person.

Meat to Rice ratio (when raw) is 1:1. The bill of materials is:

  1. Chicken, 1 kg : Rs. 200
  2. Basmati Rice, 1 kg: Rs. 120
  3. Dry Powdered Masala: Rs. 10.

    This is regular simple fresh garam masala. i.e. Indian cinnamon (Cassia bark), Cloves & Green Cardamom, roasted and powdered, in equal proportion. Adding other ingredients just “muddy’s” the taste. One can increase the cardamom ratio if a more fragrant biryani if desired.
  4. Sabut i.e. Whole Masala: Rs. 15. Equal ratio of cassia, cloves, cardamom and shajeera.
  5. Lemon, pudina/mint, dhaniya/coriander, green chillis, ginger, garlic: Rs. 30
  6. Salt, Red Chilli : Rs. 5
  7. Buffalo Yogurt/Curd - 100 gm: Rs. 10
  8. Buffalo Ghee - 75 gm: Rs. 30
  9. Onions - 300 - 400 gm: Rs. 7 (in good old Rs. 20/kg days). Now Rs. 35.
